il Vescovo EVOO (Extra Virgin Olive OIl (500ml) — $15.00
The inspiration behind Chapel Hill’s The Retreat Extra Virgin Olive Oil (EVOO) is to produce an oil which showcases the quality and range of olives available to us in McLaren Vale. We intend to embrace the seasonal variation which allows different areas and varieties to perform in certain years. Our close association with regional food through The Retreat at Chapel Hill makes olive oil an ideal accompaniment to our award winning wine and food product range.

In 2010, many parcels of fruit ripened quickly due to low yields, so it was important to select oils which maintained their fresh aroma and flavour characteristics. The oils chosen for this year’s blend reflect varietal differences which we have combined to make a flavoursome and balanced oil.

The olives for the The Retreat EVOO are processed locally by centrifugation, as soon as possible after harvest and without the use of excessive heat; hence the flavour, aroma and health benefits of the oil are maintained.

We have included the vintage on our bottle to encourage our customers to purchase the freshest oil possible and be aware when the new seasons oils are available.

This year The Retreat EVOO is a blend of two varieties – Koroneiki and Frantoio. Koroneiki is the predominant oil variety in Greece and is renowned for its superb oil quality. Koroneiki produces robust oil with aromas of fresh grass and rocket and has a peppery, pungent finish. Frantoio is the most highly regarded Italian variety producing fresh, fruity oil with aromas of banana and green apple.

In our 2010 oil these two varieties combine to produce an oil which is fruity, green, herbaceous and pungent. On the nose there is cut grass and lemon peel and on the palate lots of pepper and a dash of pungency.

This oil is a robust oil which can be used to enhance the flavours in food or provide a flavour all of its own!
