Our desire is to showcase Chardonnay’s strengths of mouthfeel and length with it’s unique ability to effortlessly incorporate complexity and still maintain fruit purity. One of the truly great grape varieties.
- Winemaking Notes
Only the delicate Free Run juice fraction is utilised for this wine. 10% Natural Fermentation in oak for 2 months using 5 year old French Oak Hogsheads. The barrel fermentation and maturation has resulted in a more layered and textured palate, whilst still maintaining the trademark varietal citrus and stone fruit purity. The remainder of the wine is held cool in stainless steel tanks and on its yeast lees for 4 months prior to bottling.
- Growing Conditions
The 2018/19 growing season was one of extremes. The vines had to endure some challenging conditions during bud-burst and flowering as well as warmer weather following veraison. Fortunately, February and March provided perfect ripening weather allowing the vines to comfortably cruise through to harvest. Whilst yields were slightly lower, the concentration and vibrant flavour in the resulting fruit was definitely a highlight.
- Food Pairing
Grilled sword fish with Asparagus and lemon butter.
