‘Lofi’ is our way of describing wines made with minimal intervention.
The style harks back to simpler times before all the modern shiny processing equipment. The wines are made without any additions, with no filtering or fining; rustic and unprocessed, kind of like a bowl of nona’s handmade pasta. As a result, they are full of texture and layers of flavour. Although these wines are hands off, they are very much eyes on as “faults” are still a big no no. Like all our wines, they champion fruit purity above all else.
Vermentino is an Italian variety which hails from the sunny Mediterranean Islands of Sardinia and Corsica and the coastal areas of Liguria. It produces large pyramidal bunches with thick skins which can withstand our harsh Aussie climate. We love to see a sprinkling of amber, sun kissed berries through the bunches prior to harvest as it brings out delicious honeyed citrus flavours.
The Vermentino grapes are wild fermented on skins and we lightly plunge the cap a couple of times a day. After 7 days, the skins are basket pressed and the wine is matured on yeast lees for 12 months; six months in seasoned french oak followed by six months in stainless steel. When we bottle, it’s unfiltered, with just a squirt of sulphur, to keep it fresh.
Now the fun part…. On the nose, ginger and chamomile and lashings of lemon tea with a hint of smoky whisky. A generous and textural palate of grilled stone fruits and grapefruit pith with a salivating, saline finish. Savoury, complex and mineral yet perfectly balanced.
