The Parson Shiraz is the perfect gateway to McLaren Vale Shiraz and it’s evocative array of fruit flavours and textures. This wine displays generous aromas of mulberries, dusted with exotic Indian spices. The luscious palate is brimming with both aniseed and satsuma plum flavours that seamlessly integrate into the persistent mouth coating tannins.

To achieve the desired style, the grapes were strategically harvested to avoid any overripe, broad or jammy fruit flavours. The subsequent red ferments were then handled gently and allowed to remain on skins for up to 8 days to ensure optimum extraction of flavour and tannin. Following gentle pressing the free run and pressing fractions are combined. To promote and nurture varietal expression and complexity only well seasoned tight grained French oak was used during the maturation process. During this maturation period the wine was regularly racked to encourage the integration and mellowing of the boisterous youthful tannins.
- Growing Conditions
Soil profiles at Chapel Hill reached capacity early in winter and set the vines up well for a challenging season. Budburst was at the usual time and a warm, dry spring followed. The conditions kept disease pressure low and reduced vine vigour and yield.
Whilst summer started out very hot, the season cooled through January. February brought welcome rain to freshen up the vines. The cool weather continued into harvest allowing fruit to be picked at optimum ripeness and plenty of time for extra care in the winery.
