2022 The Gorge Block Cabernet Sauvignon (2022)
The Gorge Cabernet Block is one of the jewels of our estate vineyard.
Gentle and patient winemaking is preferred to ensure that the wine expresses the unique site characters. The selectively harvested grapes were gently crushed, fermented in an open fermenter and hand plunged to facilitate subtle tannin extraction. After 13 days on skins the fermenter was basket pressed and the free run and pressing fractions were combined. The wine was then aged for 20 months in 100% tight grained French oak. The proportion of new oak was kept low to encourage the continued expression of the characters that are exclusive to the vineyard site. To preserve purity and character the wine is made with minimal additions and is allowed to clarify naturally without the use of fining or filtration.

Description: Medium deep crimson. Intense blackcurrant, graphite aromas with hints of cedar and bush garrigue. Generously concentrated with ample cassis, dark plum, blackberry fruits, cola/ chinotto notes, fine loose knit grainy firm tannins and well-integrated cedar notes. Richly flavoured and complex with superb filigreed claret structure and mineral length. Velvety and plush at entry but sinewy and tight at the finish with a long tannin plume.

Description: Wonderful aromas that are pure cabernet. A blackcurrant and slightly bay leaf and black olive tapenade infusion. A little suggestion of ironstone and graphite brings in further detail. The palate is still firm and coiled with a deep thread of oak and tannin supporting powerful fruit. An impressive wine with great cellaring potential.
